Viticulture

Soils:

Duplex type along a fault line between lower ancient granites and more recent Table Mountain sand stone.

Aspect & Elevation:

North West from 210-275m above sea level at 8km from the Atlantic Ocean.

Trellis & Plant Density:

Spur pruned on fence type at +/- 4000 plants per hectare.

Harvest dates:

28th February - 13th March 2012, hand harvested

Winemaking

Cellar door:

All grapes hand sorted with Chardonnay and Semillon whole bunch pressed straight to barrel. Sauvignon Blanc and Viognier de-stemmed and crushed through press to stainless steel tanks.

Fermentation:

All varieties kept separate with spontaneous “wild” yeast.

Maturation:

Individual batches are matured for three months on fermentation lees. The batches are blended and matured with fine lees contact for a further three months through winter and bottled in spring. The wine is cellared for at least year in bottle before release.

Winemaker’s Note:

This White Blend strives for an exacting balance in expression ultimately showcasing the inherent qualities which embody the vintage and the maritime location that is Sumaridge. Made using grapes selected from our more elevated blocks with coarse grained soils and exposed aspects which allow one to connect through this wine with site and the beauty of the surroundings. The wine shows poise and finesse distinguished by an expansive mid palate weight and a lingering lively finish. A serious maritime food wine!
