Viticulture

Soils:

Rocky, iron rich brown stone soils from well drained upper slope.

Aspect & Elevation:

North West from 210-230m above sea level at 8km from the Atlantic Ocean.

Trellis & Plant Density:

Spur pruned on fence type at +/- 4000 plants per hectare.

Harvest dates:

21st -22nd March 2015, hand harvested to crates.

Winemaking

Cellar door:

De-stemmed and whole berry with cold soak for up to 5 days in a closed red wine tank fermenter.

Fermentation:

Selected yeasts with pump over’s for on average 10 days duration.

Maturation:

Matured with Malolactic fermentation in 225lt barrels for 15 months with a single racking after MLF.

Bottled:

March 2016, the wine is deemed ready for release however will benefit from time in the bottle.

Winemaker’s Note:

Vigour constraining site provides a complex, full bodied, yet classy Merlot that shows a restrained brooding dark fruit profile amply supported by mocha notes and lifted vanilla spice. The textured palate is defined by an enduring line of soft tannins with a lingering aftertaste. This wine is typically accessible now and with a well balanced structure and ripe fruitiness it has good maturing potential up to 10 years. Versatile comfort food wine and handles tomato based dishes well.
