Viticulture
Soils:
Duplex type from ancient granites overlaying a saprolytic clay (weathered mother rock) of a chalky texture.
Aspect & Elevation:
East facing at 215m above sea level, along the valley side approximately 8km from the Atlantic Ocean.
Trellis & Plant Density:
Guyot pruned on fence type trellis at +/- 4500 plants per hectare.
Harvest dates:
1st-5th March 2013 with careful hand harvesting.
Winemaking
Cellar door:
All grapes hand sorted over a table before the destemmer and gently crushed and cooled to fermenter with a portion of ripe stalks returned to the must.
Fermentation:
Specially selected parcels are treated individually
using suitable cultivated yeasts in stainless closed
fermenters, pumping over for careful extraction.
Maturation:
The wine is fermented dry on skins and gentlypressed to barrel and matured for 15 months.
Winemaker’s Note:
A full, rounded and complex Pinotage that abounds with black cherry, plum and dark berry fruit aromas. Judicious oaking balances the tannins resulting in complexity and the well structured mouth feel, fi nishing with a lingering impression of the interplay of elegance and power. Enjoy now or keep for 5 to 10 years to experience the evolving secondary characteristics of matured Pinotage wine.
