Viticulture

Soils:

From deep alluvium to rock ironstone.

Aspect & Elevation:

South West from 210-230m above sea level at 8km from the Atlantic Ocean

Trellis & Plant Density:

Spur pruned on fence type at +/- 4000 plants per hectare.

Harvest dates:

1st March 2016, hand harvested from specific cooler slopes.

Winemaking

Cellar door:

All grapes hand sorted, cooled, de-stemmed and crushed to press for 8-12hrs skin contact before settling.

Fermentation:

In tank using selected yeast strains at low temperature 12.5-15’C.

Maturation:

None - racked off fermentation lees and prepared
for bottling.

Bottled:

10th May 2016 and is immediately ready for release.

Winemaker’s Note:

Our Rosé shows a brilliant carmine colour and a fresh bouquet of strawberry and red forrest fruit. A carefully crafted wine using early harvested Merlot, Cabernet Franc and Malbec grapes for our cool sea facing sites. The style is elegant and classy on a warm summer’s day. This soft, easy drinking but flavourful wineis ideally served chilled with alfresco fare or simply enjoyed in familiar company.
