Viticulture
Soils:
Equally representative across the lower ancient
granite loam and more recent Table Mountain sand
stone on the upper slopes.
Aspect & Elevation:
North West from 205-230m above sea level at 8km
from the Atlantic Ocean.
Trellis & Plant Density:
Spur pruned on fence type at +/- 4000 plants per hectare.
Harvest dates:
22nd Feb - 4th March 2016, hand harvested in the cool of the day from 05:00 to 10:00 hrs in the morning.
Winemaking
Cellar door:
All grapes hand sorted, cooled, de-stemmed and crushed through press to stainless steel tanks.
Fermentation:
Individual blocks vinifi ed separately in tank using selected yeast strains at low temperature 10-12.5’C.
Maturation:
One month on fermentation lees after which the batches are racked with fi ne lees contact for a further few months bottled.
Bottled:
6th May 2016 - the wine is immediately ready for release but does benefi t from time in bottle.
Winemaker’s Note:
An elegant example, defined by the cool maritime location of the vineyards with added complexity derived from varying site elevation soil texture and slope. The blocks were specifically harvested and vinified separately to optimise site, this wine captures the essence of the variety in our location. Striking purity of freshness with fig, waxy gardenia flower and green citrus notes. A feature of our style is the broad textured palate evolved during a period of contact on fine lees which adds flesh to a refreshing mineral finish. Fresh salads, fine fish and goats milk cheese.
